Stay at Home Hubs

Since Dave is done with classes (forever by the way) he has been staying home during the day, working on a few projects and applying for jobs. Yesterday, I realized just how nice it was to have a stay at home husband.

He did this:

And made this for dinner:


Ultimate Chicken Fingers

3 boneless skinless chicken breasts cut crosswise into 1/2" strips (or 1 lbs of chicken fingers)
2/3 C Original Bisquick Mix
1/2 C Grated Parmesan cheese
1/2 tsp salt
1/2 tsp paprika
1 egg, beaten
3 Tbs melted butter

Heat oven to 450F. Line cookie sheet with foil; spray with cooking spray. In a 1-gallon resealable storage bag, mix Bisquick mix, cheese, salt, and paprika

Dip half the chicken strips into eg; place in bag. Seal bag; shake to coat. Place chicken on cookie sheet. Repeat to use up remaining chicken. Drizzle butter over chicken.

Bake 12-14 min, turning halfway through bake time until no longer pink in center.

4 Servings.

A girl could get used to this! :)

In other news, Dave has an interview in Austin, TX for a teaching position at the Art Institute of Austin in the audio department. He also just applied today for a job at Utah Valley University in Orem, UT. It is a full time tenure track professor position in their media arts department. We will keep you posted!

In additional other news, my little sister Stephanie is back from Asia! She was there with the BYU Wind Symphony on tour. They went to Korea and Japan. I didn't get to talk to her for 4 whole weeks! She was basically a celebrity out there as the principle flutist. She had people from the audience asking for her autograph after performances. She is coming to visit tomorrow night and staying until Monday. It will so fun to see her and hear all about her adventures abroad!

Sunsets and Grocery Store Disasters

I was really happy last night. I actually don't know why, but here are some of my speculations:

*After work, Dave and I went swimming and tanned by the pool in the 80 degree weather.

*Walking back from the pool, a man was cutting the grass around our apartment grounds and the smell of freshly cut grass reminded me of being a kid.

*This song was playing over and over in my head Hands by Ms. John Soda

*I went to the grocery store and on my way I saw this at approximately 8:18pm:

So now onto a tale - a tale of grocery store disaster. I have been on this kick lately of slashing our grocery budget by $50 a month. I cut out $15 worth of coupons and gave myself a certain limit for the amount I could spend last night. As I was walking around I was feeling really good about my choices of food products.

An older gentleman in the bakery even flirted with me when I asked, "Could you slice this loaf of bread or is it too late?" He replied, "With a smile like that, it's never too late for you." What does that even mean? Oh well, my bread was lovingly sliced to perfection.

Now back to the disaster part of this tale.

Let's just say that even after my coupons, I was over budget...by double. Listen, I can't help it if avocados, cherries, braeburn apples, freshly sliced turkey, and baby swiss tempt me!

Maybe next time I will do better.

Saturday Morning Waffles

I love when I don't have to work on Saturdays because we have time to make a fun breakfast! This past Saturday, Dave and I made homemade waffles with syrup and fresh strawberries.


Waffles
2 eggs
2 C flour
1 3/4 C milk
1/2 C veg oil
1 T sugar
4 t baking powder
1/4 t salt
1/2 t vanilla extract

Preheat waffle iron. Beat eggs in a large bowl with hand beater until fluffy. Beat in flour, milk, veg oil, sugar, baking powder, salt and vanilla. Only beat until smooth - over beating can cause the waffles to be less fluffy

Spray preheated waffle iron with non-stick cooking spray. Pour mix into hot waffle iron and cook until golden brown. Serve with warm syrup, whipped cream, and fresh fruit.

1,460 days of marriage ~ and lovin' every minute

Yesterday was our 4 year anniversary. It was a fun day - we went to Cheesecake Factory for dinner, then came back to our place and danced to a song recorded and performed (voice and instrument) by Dave.
