Breakfast with Rebecca and Kate




Last weekend, Dave's Aunt Rebecca and her daughter Kate drove up from Colorado Springs to meet us for breakfast. It was a really great day!

A few weeks ago, Dave and I went to the Denver Museum of Nature and Science. I wanted to see the dinosaurs because I had never seen real dino bones. Also they had a way cool Egyptian exhibit complete with mummies!

Being there reminded me that history is actually really cool.

I love living close to a big city that has nature museums, art museums, amusement parks, restaurants, and performing arts centers! Oh and p.s., it's going to be 62 degrees today. I'm thinking you should come visit.

Good Eats

Saturdays when I don't have to go to work are wonderful bliss. Dave whipped up some cheese eggs and I made these delectable muffins. I love muffins, so simple and so good.

Mmm...Banana Chocolate Chip Muffins


Banana Chocolate Chip Muffins
Makes 16 Muffins

INGREDIENTS
  • 1 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas
  • 3/4 cup semisweet chocolate chips
DIRECTIONS
  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
  • In another bowl, combine the egg, oil, yogurt and vanilla.
  • Stir into dry ingredients just until moistened.
  • Fold in bananas and chocolate chips.
  • Fill greased or paper-lined muffin cups two-thirds full.
  • Bake at 350 degrees F for 22-25 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pans to wire racks.

Carefree Days

Yesterday was a beautiful day, it almost got up to 60 degrees.

Any of you that really know me, know that I LOVE to be outside. I sometimes wonder why I wasn't born as a bird.

We went out on the town, which included motorcycle shopping (Davey + Honda Rebel = true love), getting huge sodas from the gas station (the epitome of carefree days), going to Cost Plus to pick up some ethnic food (Indian and Thai food was the theme yesterday), and ending the day with a trip to one of my favorite places - Souper Salad.

Then, at the end of the day, we came home, inflated the air mattress, and watched Friday Night Lights on the computer.

It was a good carefree day.
