Keystone Resort

My sister Stephanie and her friend Shawn were in town last weekend so we packed a lunch and headed up to Keystone Ski Resort to do some tubing up on the big mountain!

Chocolate covered carmel apple dipped in chocolate chips. Ya.

Good Eats (not to be eaten together)

Creamy Asparagus Soup

1 bunch fresh asparagus, ends trimmed
2 T butter
1 medium diced onion
3 cups chicken broth
1 medium size potato peeled and diced
1/4 t salt
1/4 t dried dill
1/8 t pepper
1 T water
1/2 cup heavy cream

Chop asparagus stalks into 1/2 inch pieces. In 4 quart saucepan, melt butter over medium and add onion; cook for 3 minutes. Add asparagus stalk pieces; cook for 2 minutes. Add chicken broth, potato, salt, dill and pepper. Bring to boil.

Reduce heat to medium high and cook uncovered 10 - 12 minutes. Remove soup from heat and puree in blender or foot processor until smooth. Stir in cream and serve warm.



Mango Sorbet
We couldn't wait an hour, so mine was more like a smoothie...but still so yuuuuummy!

2 mangoes - peeled, seeded, and cubed
1 cup sugar
1 cup cream
1 (generous) cup ice
fresh and dried mint

Place cubed mangoes, sugar, cream, and ice into a blender; puree until smooth.
Pour mixture into a large resealable plastic freezer bag. Seal and freeze for 1 hour. Move the contents around in the bag every 15 minutes while freezing. Serve in glass or bowl and garnish with mint.

Picnic on a Sunday Afternoon

This past Sunday, we were driving home from church in 60 degree weather, and my sister LeAnne suggested that we have a picnic. The idea was unanimously accepted. We made paninis, brought apples, crackers, cookies, and diet dp (of course).




Just when I was Appreciating the Beauty in Life...

I was in line this morning at Ace Hardware. I had to swing by and get a copy of my work key made. The gentleman in front of me was returning some things, and the cashier was an older lady. She was typing and clicking one key at a time, saying things like, "well it isn't February, so I don't know why that's on there." Whatever that means.

I was waiting patiently, determined to stay positive, even though I was most likely going to be late for work. Then an older man walked up to the register and stood behind me in line. The store was playing some pretty schnazzy jazz music and he started to shuffle his feet. Then he started bobbing his head while shuffling his feet. Then came the swinging of the arms. Soon, he was full on dancing.

The cashier was still trying to, "find the right key to push" because, "I gotta cross my Ts and dot my Is and do it right, so that no one else has to go through this lengthy process again." Old Man Footloose, still jiving behind me. I thought it was great that he enjoyed life so much.

Finally it was my turn. The lady rang me up and I had to pay with the company credit card. As she was swiping the card, Old Man Footloose says to me, "is there enough on that card for me?" I kind of laughed and said, "it's my company card, so I better not loan it to anyone." Then the cashier handed me my receipt and I started walking away. The final comment out of Old Man Footloose's mouth was, "Hard to get anything out of a woman these days."

Old Man Footloose just got demoted to Old Man Jerk Face.

I love me some photography

One of the funnest things about having my sister LeAnne in town, is that I have someone to model for me all the time! It doesn't hurt either that she's gorgeous!

Jimmy Eat World with Layton!

This past Monday, Dave's brother Layton came into town so we could go to the Jimmy Eat World Clarity tour concert. It was an amazing concert.



Oh also, my sister LeAnne is staying with us for a few weeks before she moves out to Australia (my dad got transferred there until October). She has been so much fun to have around!
