Stay at Home Hubs

Since Dave is done with classes (forever by the way) he has been staying home during the day, working on a few projects and applying for jobs. Yesterday, I realized just how nice it was to have a stay at home husband.

He did this:

And made this for dinner:


Ultimate Chicken Fingers

3 boneless skinless chicken breasts cut crosswise into 1/2" strips (or 1 lbs of chicken fingers)
2/3 C Original Bisquick Mix
1/2 C Grated Parmesan cheese
1/2 tsp salt
1/2 tsp paprika
1 egg, beaten
3 Tbs melted butter

Heat oven to 450F. Line cookie sheet with foil; spray with cooking spray. In a 1-gallon resealable storage bag, mix Bisquick mix, cheese, salt, and paprika

Dip half the chicken strips into eg; place in bag. Seal bag; shake to coat. Place chicken on cookie sheet. Repeat to use up remaining chicken. Drizzle butter over chicken.

Bake 12-14 min, turning halfway through bake time until no longer pink in center.

4 Servings.

A girl could get used to this! :)

In other news, Dave has an interview in Austin, TX for a teaching position at the Art Institute of Austin in the audio department. He also just applied today for a job at Utah Valley University in Orem, UT. It is a full time tenure track professor position in their media arts department. We will keep you posted!

In additional other news, my little sister Stephanie is back from Asia! She was there with the BYU Wind Symphony on tour. They went to Korea and Japan. I didn't get to talk to her for 4 whole weeks! She was basically a celebrity out there as the principle flutist. She had people from the audience asking for her autograph after performances. She is coming to visit tomorrow night and staying until Monday. It will so fun to see her and hear all about her adventures abroad!

Yay! Congrats to Dave!! (and kudos to you for going through another degree with your hubby). Never say that they are done forever...from time to time, they will get that bug and feel that they need to go back. Trust me!

We'll keep our fingers crossed as Dave starts applying & interviewing for jobs!
